Ingredients
  

Pasta and Eggs
  • 8 oz elbow macaroni or any pasta of choice
  • 4 large eggs hard-boiled and chopped
Dressing
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1 tbsp fresh chives chopped
Vegetables
  • 1 cup celery diced
  • 1 cup red bell pepper diced

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooked pasta, chopped eggs, celery, red bell pepper, and dressing. Mix gently until everything is well coated.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled, garnished with additional chives if desired.
