Ingredients
  

  • 1.5 pounds russet potatoes peeled and chopped
  • 0.75 cup unbleached all-purpose flour
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons melted butter divided
  • 2-3 tablespoons butter for frying
  • flaky salt for serving
  • snipped fresh chives for serving

Method
 

  1. Boil the chopped russet potatoes until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Mash the potatoes in a bowl and add the flour, kosher salt, black pepper, and 1 tablespoon of melted butter. Mix until well combined.
  3. Divide the potato mixture into 6 equal portions and shape them into flat circles (farls).
  4. Heat the remaining butter in a skillet over medium heat. Fry the farls for 3-4 minutes on each side until golden brown.
  5. Remove from the skillet and sprinkle with flaky salt. Serve with snipped fresh chives.
