Ingredients
  

Mochi Dough
  • 100 g glutinous rice flour
  • 30 g cornstarch
  • 90 g milk
  • 40 g sugar
  • 50 g glutinous rice flour for dusting
Strawberry Cream
  • 90 g strawberries
  • 150 g heavy whipping cream
  • 15 g sugar
For Glazing
  • 4 tbsp strawberry jam optional
  • 20 g unsalted butter for melting on mochi

Method
 

Mochi Preparation
  1. Combine 100 g of glutinous rice flour, 30 g of cornstarch, 90 g of milk, and 40 g of sugar in a bowl to create the mochi dough.
  2. Sift 50 g of glutinous rice flour onto a surface for dusting.
  3. Cook the mochi dough in a microwave or by steaming until it becomes translucent and chewy.
  4. Allow the mochi to cool slightly before forming it into rounds.
Filling and Finishing
  1. Blend 90 g of strawberries with 150 g of heavy whipping cream and 15 g of sugar to create the strawberry cream.
  2. Fill each mochi round with the strawberry cream and tuck in the edges.
  3. Use 4 tbsp of strawberry jam to glaze the outside of the mochi, if desired.
  4. Melt 20 g of unsalted butter and brush it over the finished mochi before serving.
