Dough Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold, cubed
  • 1/4 cup cold water
Filling Ingredients
  • 1 lb ground beef or chicken
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup olives sliced
Egg Wash
  • 1 large egg beaten
  • 1 tablespoon water

Method
 

Making the Dough
  1. In a mixing bowl, combine flour and salt.
  2. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Preparing the Filling
  1. In a skillet, cook the ground beef or chicken over medium heat until browned.
  2. Add diced onion and minced garlic; sauté until onion is translucent.
  3. Stir in cumin and paprika, and mix well.
  4. Remove from heat and let the filling cool; mix in sliced olives.
Assembling the Empanadas
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the dough on a floured surface to about 1/8 inch thick.
  3. Cut into circles using a cutter or glass.
  4. Place a spoonful of filling on one half of each circle.
  5. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  6. Beat the egg with water and brush over the tops of the empanadas.
  7. Place the empanadas on a baking sheet and bake for 20-25 minutes or until golden brown.
