Making the Dough
- In a mixing bowl, combine flour and salt.
- Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Preparing the Filling
- In a skillet, cook the ground beef or chicken over medium heat until browned.
- Add diced onion and minced garlic; sauté until onion is translucent.
- Stir in cumin and paprika, and mix well.
- Remove from heat and let the filling cool; mix in sliced olives.
Assembling the Empanadas
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface to about 1/8 inch thick.
- Cut into circles using a cutter or glass.
- Place a spoonful of filling on one half of each circle.
- Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Beat the egg with water and brush over the tops of the empanadas.
- Place the empanadas on a baking sheet and bake for 20-25 minutes or until golden brown.
