Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth low sodium preferred
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mixed vegetables carrots, peas, and corn

Method
 

Preparation
  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper. Sear the chicken for 2-3 minutes on each side until browned.
  2. Transfer the seared chicken to the crock pot. Add chicken broth and mixed vegetables on top.
Cooking
  1. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  2. Once cooked, shred the chicken with two forks and stir it back into the sauce and vegetables.
Serving
  1. Serve the chicken over rice or with crusty bread to soak up the sauce.
