Ingredients
  

Couscous Base
  • 2 cups couscous preferably medium grain
  • 2 cups water or vegetable broth
  • 2 tablespoons olive oil for flavor
  • 1 teaspoon salt
Vegetable Mixture
  • 1 cup carrots diced
  • 1 cup zucchini diced
  • 1 cup bell pepper diced
  • 1 cup chickpeas canned or cooked
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 tablespoon parsley chopped for garnish

Method
 

Prepare Couscous
  1. In a large pot, bring water (or broth) to a boil. Stir in salt and olive oil.
  2. Add couscous to the boiling water, remove from heat, cover, and let sit for 5 minutes.
  3. Fluff couscous with a fork to separate grains.
Cook Vegetables
  1. In a couscousier or large pot, add diced carrots, zucchini, and bell pepper.
  2. Add chickpeas, cumin, and cinnamon. Cook over medium heat until vegetables are tender, about 15 minutes.
Combine and Serve
  1. Mix the cooked vegetables with the fluffed couscous. Adjust seasoning if necessary.
  2. Garnish with chopped parsley and serve warm.
