Ingredients
  

Vegetables
  • 2 cups corn kernels fresh or canned
  • 1 medium red onion finely chopped
  • 1 medium red bell pepper diced
  • 1 medium jalapeño seeded and minced
  • 1/2 cup cilantro chopped
  • 1 medium lime juiced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the ingredients
  1. In a mixing bowl, combine the corn, red onion, red bell pepper, jalapeño, and cilantro.
  2. Squeeze the lime juice over the mixture and add salt and black pepper.
Mix and serve
  1. Toss all the ingredients together until well combined.
  2. Taste and adjust seasoning if necessary. Serve immediately with tortilla chips or as a topping.
