Ingredients
  

Chicken Salad
  • 2 cups Cooked Chicken Shredded or diced
  • 1 cup Mayonnaise Adjust to taste
  • 1 cup Celery Diced
  • 1/2 cup Red Grapes Halved
  • 1/4 cup Almonds Sliced or chopped
  • 1 teaspoon Dijon Mustard Optional
  • 1 teaspoon Lemon Juice Freshly squeezed
Sandwich Assembly
  • 8 slices Bread Whole grain or your choice
  • 4 leaves Lettuce Rinsed and dried

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, almonds, Dijon mustard, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Taste and adjust seasoning if necessary.
Assemble Sandwiches
  1. Lay out the slices of bread on a clean surface.
  2. Spread a generous amount of the chicken salad mixture onto four slices of bread.
  3. Top with lettuce leaves and cover with the remaining slices of bread.
  4. Cut sandwiches in half and serve immediately.
