Ingredients
  

Filling
  • 1 lb chicken breast cooked and shredded
  • 1 cup carrots diced
  • 1 cup peas
  • 1 cup potatoes diced
  • 1/2 cup onion diced
  • 1/4 cup butter for sautéing
  • 1/4 cup flour for thickening
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp thyme dried
  • 1 tsp salt
  • 1/2 tsp black pepper
Cheddar Bay Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter cold and cubed
  • 1 cup cheddar cheese shredded
  • 3/4 cup milk
  • 1 tbsp parsley chopped
  • 1 tbsp garlic powder
  • 1/4 cup butter melted for brushing

Method
 

Prepare the Filling
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, melt butter over medium heat and sauté onions, carrots, and potatoes until tender.
  3. Stir in flour and cook for 1 minute.
  4. Gradually add chicken broth and heavy cream, stirring until thickened.
  5. Add shredded chicken, peas, garlic powder, thyme, salt, and pepper. Mix well.
  6. Transfer the filling to a baking dish.
Make the Biscuit Topping
  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Stir in cheddar cheese, milk, parsley, and garlic powder until just combined.
  4. Drop spoonfuls of the biscuit mixture over the chicken filling.
Bake the Pot Pie
  1. Brush the biscuit topping with melted butter.
  2. Bake in the preheated oven for 25-30 minutes or until biscuits are golden brown.
  3. Let cool for a few minutes before serving.
