Carne Asada

Ingredients
  

Marinade
  • 2 lbs flank steak or skirt steak
  • 1/4 cup olive oil
  • 1/4 cup lime juice freshly squeezed
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
Toppings
  • 1 cup chopped cilantro
  • 1 cup diced onion
  • 1 cup sliced radishes
  • 1 cup lime wedges

Method
 

Marinate the Steak
  1. In a mixing bowl, whisk together olive oil, lime juice, cumin, garlic powder, oregano, salt, black pepper, and chili powder.
  2. Place the flank steak in a large resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
Grill the Steak
  1. Preheat the grill to high heat.
  2. Remove the steak from the marinade and discard the marinade. Grill the steak for about 5 minutes on each side for medium-rare, or until desired doneness.
  3. Remove from the grill and let rest for 5 minutes before slicing against the grain.
Serve
  1. Serve the sliced carne asada with chopped cilantro, diced onion, sliced radishes, and lime wedges.
