Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter cold, cubed
  • 1 cup heavy cream
  • 1 cup fresh blueberries or frozen
  • 1 tsp vanilla extract
For Topping
  • 1 tbsp granulated sugar for sprinkling

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold, cubed butter to the dry ingredients and use a pastry cutter to mix until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Gently fold in the blueberries.
Baking
  1. Turn the dough out onto a floured surface and pat it into a circle about 1 inch thick.
  2. Cut the dough into wedges and place them on the prepared baking sheet.
  3. Sprinkle the tops with granulated sugar.
  4. Bake for 15-20 minutes or until golden brown.
  5. Let cool slightly before serving.
