Ingredients
  

Chicken and Vegetables
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cups butternut squash peeled and cubed
  • 2 cups brussels sprouts trimmed and halved
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder

Method
 

Prepare the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken thighs with olive oil, salt, pepper, thyme, and garlic powder until well coated.
Prepare the Vegetables
  1. In a separate bowl, combine the butternut squash and brussels sprouts. Drizzle with olive oil and season with salt and pepper.
Roast Everything
  1. Place the seasoned chicken thighs in a roasting pan, skin side up.
  2. Surround the chicken with the butternut squash and brussels sprouts.
  3. Roast in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
  4. Let rest for 5 minutes before serving.
